Learn about making fresh egg dough including the process beginning from the “well” method, the importance of resting and choosing the right flours.  A walk through of some simple, yet significant shapes and styles of pasta made using egg dough all with minimal tools and experience focusing on hand made pasta shapes.

A simple sauce and final dish of: Tagliatelle al funghi
